This cake was created by French pâtissier Gaston Lenôtre in 1969, when Air France flew its supersonic jet for the first time. This Cake is a combination of cocoa meringue and chocolate mousse: It is light, sweet, soft, crisp and delightful.

I ordered a Concorde from Amuse-Bouche recently for my twins’ 20th birthday… It was absolutely delicious and as good as the ones I used to savor in France for my own birthdays. Bravo to the pastry chef! I would definitely recommend this dessert for a festive occasion.
