HAPPY NEW YEAR !

Traditionally in France, bakeries and pastry shops propose the famous “galette des rois“, the King’s cake, for the celebration of Epiphany on January 6. This special cake is made with a delicate, buttery puff pastry filled with almond cream, called frangipane.

It is the tradition to hide a fève (bean) into the pastry and whoever gets the bean, becomes the king for the day and wears a paper crown…

It was a real pleasure for me, to make my own puff pastry and frangipane cream then bake this famous “galette“.

Puff pastry is only flour and butter… a lot of butter!

I very often mix this frangipane with pastry cream… and the result is simply delicious.
